1. What can the EcoKitchen do that Other Filtration Systems Can’t Do?
From EHA4 to EHA2
The filters installed in EcoKitchen systems guarantee a reduction of the particulates and odours developed/ emitted during the cooking process from EHA4 to EHA2. The EcoKitchen uses the most up-to-date filtration and deodorising systems on the market today.

Air is Suitable for Recirculation A vertical duct riser may not be required as the air quality exhausted from EcoKitchen is suitable for recirculation.

Minimal Pressure Drop
– Minimal pressure drop through the filters resulting in reduced operating costs.

Lifecycle of the Filters
– The life cycle of the filters is equal to the useful life of the entire unit, with correct cleaning/maintenance.

3. How does EcoKitchen work?

Stage 1 – Elimination of Grease and Oil

The first stage of EcoKitchen is aimed at the elimination of grease and oil from the airstream and is made up of 3 filter types which are;

– PFMETAL: three stages metal mesh prefilter. Three prefilters of different mesh thickness to abate oil and grease

– Electrostatic Precipitators – The electronic field generated by the Electrostatic filter is used to capture any remaining grease, smoke and oil particles.

– Labyrinth filters – They capture water vapour and oil.

– Sponge Filters – They capture high volumes of oil and grease.

Stage 2 – Elimination of Odour and Bacteria

The second stage of EcoKitchen addresses odour and residual bacteria.

– IONISATION FILTER and OZONATION FILTER combine to reduce odours and create an hygienic/antibacterial effect. This combination creates a super oxidant which preserves the life of active carbons (virgin granular active carbon not regenerated)

– LABYRINTH FILTER: used as a turbulator to homogenize the air inside active carbons filters and take advantage of all the surfaces of them.

– FAN (before active carbons to reduce noise)

– Active Carbon Filters – The virgin granular active carbon filters are fitted to allow the longest possible contact time with the air. This increases odour absorption, reduces pressure drops and reduces ozone levels to WHO approved levels.

It is designed specifically for the removal of smoke and grease particles from the air stream of commercial kitchen exhaust systems and for the elimination of odour. The filters inside the module guarantee a constant efficiency of filtration and, thanks to a high ability of separation and accumulation of oil, allow a remarkable energy saving and low pressure drop. The module is produced in galvanised steel and painted with epoxy dusts colour RAL 7035.

4. Testimonial from David Sheehan, Staple Foods

“EcoKitchen has been an excellent tool for us to achieve sign off and support from our Landlord when opening our new restaurant. With several high-end residences above our premises the landlord was explicit in their request to have zero extraction from the premises. They did not want the residents to be getting various cooking smells at various times of the day and to this end we decided to look for a provider for a recirculated system that would meet our budget and our landlord’s expectations.
We found EcoKitchen after researching the internet and investigating several different extraction supplier’s options. We felt that given the fact that the filtered air from EcoKitchen can be recirculated along with our fresh air supply, this meant that there was no requirement for a vertical duct riser above the building which was going to cost a small fortune to put in place. Another big bonus with EcoKitchen is that it stands alone in the market place as a filtration system that does not require filters to be changed as long as the maintenance programme is adhered to.
Having been through the process of setting up a new restaurant and been let down so many times by suppliers I can definitely say that ACS Ventilation Group deliver on their promises, on time, in a professional manner and above all, provide a quality product in EcoKitchen that we can rely on. I would certainly recommend ACS and EcoKitchen.” David Sheehan, Staple Foods

Testimonial from Gregory Fortune, Eddie Rockets

“We had continuing problems in one of our restaurants, The Counter located in Dundrum Town Centre. The existing extraction system was failing to adequately extract heat and fumes from the restaurant. This caused fire alarms to activate, extract fans to trip out constantly and Centre Management complaining about the discharge from the extract system externally.
It was clear the existing system had to be replaced. We investigated several different options including installing an updated model of what we already had – combined filtration and extract system, just replacing the fans within the unit, a new ozone filtration system and the electrostatic filtration used in the Eco Kitchen system.
We opted for the Eco Kitchen Unit based on the technology used in the extraction process, the purchase cost and future running costs. Since installing the Eco Kitchen unit the effects have been excellent.
Working conditions and dining experience, for both staff and customers are greatly improved. Heat and fumes from cooking are now efficiently extracted and filtered by the Eco Kitchen unit.
In terms of monetary savings, the Eco Kitchen running costs are much less due to not having to replace 4 sets of filters every month and far less cleaning of extract ducts to the electrostatic filters trapping most of the grease.
We found working with ACS a very easy and straight forward process.
The installation was completed with minimum disruption and after sales service was excellent and I would have no hesitation in recommending the Eco Kitchen system.” Gregory Fortune, Facilities Manager, Rocket Restaurants (Eddie Rockets)

5. What are the regulations regarding commercial kitchen ventilation?

Regulations Governing the Equipment being Specified for Commercial Kitchen Ventilation/Extraction.
Section 24 – Air Pollution Act 1987
Under section 24 of the Air Pollution Act 1987, it states;
“The occupier of any premises shall use best practicable means to limit, and if possible, to prevent an emission from such premises”. and “The occupier of any premises shall not cause or permit an emission in such a quantity, or such a manner, as to be a nuisance.”
In terms of the regulations of the system itself, to assist food businesses in selecting an appropriate system, Irish Local Authorities use the DEFRA guidance document.

DEFRA Guidance Kitchen extraction systems Document

DEFRA Guidance Kitchen extraction systems Document, Guidance on the Control of Odour and Noise from Commercial Kitchen Exhaust Systems January 2005 is a UK guidance document but is accepted as general compliance with the Irish Air Pollution Act 1987.

BESA (Building and Engineering Services Association) DW172 Specification for Kitchen Ventilation Systems

The BESA (Building and Engineering Services Association) DW172 Specification For Kitchen Ventilation Systems document sets out minimum requirements in terms of ventilation extract rates and canopy details to ensure that odours and grease from cooking activities can be captured and treated prior to discharge.

Ecodesign of Energy Related Products Directive 2009

The Ecodesign of Energy Related Products Directive 2009 is European Legislation aimed at improving the Environmental Performance of products that use energy or are related to energy consumption. This should be considered when selecting fans with an electrical power input between 125W and 350kW.

6. Where has EcoKitchen been installed?

EcoKitchen has been installed in the following places –Supermarkets including LIDL, shopping centres, hotels, apartments, numerous restaurants including:
Lidl, Italy, Conad Supermarkets, Italy, Rockets Restaurants, Dublin, Staple Foods, Dublin, Coop supermarket, Chur, Switzerland, JP Morgan Bank, Milan, Migros Supermarket, Winterthur, Switzerland, The House Hotel, Jeddah, Saudi Arabia, Telal Hotel Apartments, Dubai, UAE, Il Centro Shopping Centre, Milan to mention just a few.

7. Commercial Kitchens Emissions in Urban Areas and Local Resident Objections

Often commercial food service establishments such as hotels, pubs, restaurants, delicatessens and bakeries will be near to private homes and apartments in urban areas. The fact that the emission of cooking fumes and odours often starts from the early hours of the morning may cause an issue for residents close to such emissions. This is often an extra headache that needs careful consideration when designing the kitchen ventilation system to avoid foreseeable difficulties in the planning permission process.
As you will know, the ventilation system layout you are specifying must comply with the system load conditions: for example, a high presence of fumes and odours caused by frying or cooking on the grill requires a higher filtering system compared to other cooking methods.

8.Factors Influencing the Control of Grease and Odours from Cooking Equipment

The factors influencing the control of odours coming from cooking activities include:

1. The size of the kitchen: this influences the intensity of the odour and the necessary ventilation;

2. The type of cooked food: this influences the chemical composition of the environment air;

3. The type of cooking and the equipment used: this influences the quantity of grease, of water drops and the temperature inside the environment;

4. The characteristics of the suction hood;

5. The presence of an air filtration system;

6. smoke evacuation duct;

7. height and structure of the chimney;

8. territorial context of the emission and specifically the proximity to residential areas and the location in city centres.
